Brighten your day with zesty honey yoghurt pancakes

It’s easy to bring a splash of vibrancy to your pancake day with this recipe for honey yoghurt pancakes.

Inspired by Nathan’s pancakes in my summer romance novel Love and a Kiss, Chris, these zingy pancakes are great for sharing with your friends and family. They are best when topped with a dollop of Greek yoghurt, a drizzle of honey and a scattering of blueberries.

Ingredients

Makes 12 pancakes

Prep time: 60 mins

150g plain flour

1 tsp baking powder

100ml milk

100ml Greek yoghurt, more for topping

3 tbsp honey, more for topping

Juice of ½ lemon

Zest of 1 lemon

1 large egg

20g unsalted butter, more for cooking

Sprinkle of salt

Scattering of blueberries, optional

Instructions

Sieve the dry ingredients

Sieve the plain flour and baking powder into a mixing bowl and add a sprinkle of salt. In a separate bowl, lightly whisk the egg, milk, yoghurt, lemon juice, lemon zest and honey together with a fork.

Add the butter

Melt 20g unsalted butter for 10-20 seconds in the microwave. Fold into the egg mixture.

Bring the batter together

Gradually add the egg mixture to the dry ingredients, stirring with a fork until it forms a thick batter. Lumps will remain in the mixture; it shouldn’t be smooth. Leave the batter to rest for 15 minutes.

Pan fry the pancakes

Once the batter has rested, add extra butter to a frying pan and melt on a medium heat. When the butter starts to bubble, use a wooden spoon or ladle to drop a spoonful of batter into the pan. There should be enough batter in the pan to make a pancake approximately 10cm in diameter.

Flip and cook until golden

Once bubbles start to form on the top of the pancake and the edges start to caramelise, carefully flip the pancake with a spatula and cook it on the other side until golden. This might take 2-3 minutes per side.

Repeat and serve

Repeat until all the batter has been cooked and you have 12 golden pancakes to serve immediately.

These zingy honey yoghurt pancakes are perfect for families to share around the dinner table. You could serve them on a beautiful platter alongside pots of Greek yoghurt, honey and fresh blueberries.
